Banana Bread

Overripe bananas (the ones with black spots you were about to throw out) make the best bread — the more spots, the sweeter and more intense the flavour.
Do not overmix the batter once the flour goes in. Lumps are fine; a smooth batter means tough, chewy bread.
Method
- 1 Preheat oven and grease a 9x5 inch loaf tin.Target: oven 175°C
- 2 In a large bowl, mash bananas with a fork. Stir in melted butter.Uses: ripe bananas, butter
- 3 Mix in sugar, beaten egg, and vanilla extract.Uses: sugar, egg, vanilla extract

- 5 Fold in walnuts and chocolate chips if using.Uses: walnuts, chocolate chips
- 6 Pour batter into prepared tin. Bake until a toothpick inserted in the centre comes out clean. ⏱ 55mTarget: oven 175°C
