Method

    Crack eggs into a cold pan. Add butter in small pieces.

    Place pan on medium-low heat. Stir constantly with a spatula, moving eggs from edges to centre. ⏱ 3m

    When eggs are mostly set but still slightly wet, remove from heat. The residual heat will finish them.

    Stir in cream, season with salt and pepper.
    Uses: cream, Salt and black pepper to taste

    Serve immediately on warm plates, topped with chives.
