Spicy Italian Sausage Ragu with XO Sauce and Peppers

A deeply flavoured, umami-rich pasta sauce that layers Italian-American technique with Asian pantry bombs — XO sauce and a couple of anchovies do the heavy lifting on savouriness.

Make-ahead: the sauce can be made up to 3 days in advance through the long simmer (the step before the fresh tomatoes go in). Cool and refrigerate; reheat gently, then add the fresh tomatoes and finish with the pasta.

Pre-cooking the mushrooms in a dry pan before they go in keeps the sauce from turning watery. The fresh tomatoes are added late on purpose — they keep their brightness against the long-cooked base.
