Method

    Place the chicken legs and wings in a large zipper-lock bag.

    In a medium bowl, whisk together the soy sauce, fish sauce, sugar, oil, cilantro, lime juice, lime zest, ginger, chile paste, and garlic.

    Pour the marinade into the bag, seal, and toss to coat all the pieces well. Refrigerate to marinate. ⏱ 30m

    Heat the oven on Bake (no fan) with a rack in the center position. Line a sheet pan with foil and set a wire rack on top.

    Lift the legs from the marinade, letting the excess drip off, and pat the skin lightly dry. Set them skin-side up on the rack, spaced apart, and insert a leave-in probe into the thickest leg. Keep the wings in the fridge for now. Discard the used marinade.

    Stage 2 — raise the oven to 350°F. Pat the wings dry, set them skin-side up on the rack, and probe one. Bake until the legs read 77°C and the wings 68°C. ⏱ 22m

    Stage 3 (optional) — drop the oven to 275°F and hold until the legs read 82°C. The extra time melts the leg cartilage to tender. ⏱ 12m

    Stage 4 — switch to Convection Roast (fan) at 450°F. Roast until the legs read 91°C, the wings 79°C, and the skin is browned and crackling. ⏱ 10m

The marinade is doubled from the original to coat the larger amount of chicken — marinate at least 30 minutes and up to 4 hours. Pat every piece lightly dry before it goes in the oven so the skin can crisp.

This is a probe-driven bake, not a clock-driven one. The time given for each stage is a rough guide for refrigerator-cold chicken — always move on when the internal temperature hits the target, not when the timer ends. Set a leave-in probe in the thickest leg and another in a wing, and set a high-temp alarm at 91°C (195°F) on the leg so you can pull the pan the instant it hits.

Why the staged heat works: the low Bake stages (no fan) keep the surface moist so the sugars in the sweet fish-sauce marinade don't scorch while the collagen in the legs slowly melts. The legs spend roughly an hour above 66°C (150°F), which turns the cartilage pleasantly tender while the meat stays juicy. The final Convection Roast (fan) blast at 450°F (230°C) crisps the skin in minutes, after the meat is already safe.

Probe placement: insert parallel to the bone and stop about 12mm (½ inch) short of it. During the final crisp the readings climb fast — watch them.

Discard the used marinade; it has held raw chicken.

Optional tweaks: for even meltier cartilage, tent the pan loosely with foil after Stage 2 and hold at 250°F (120°C) for an extra 20 minutes before crisping. For extra crackle, blot the skin dry and brush it very lightly with neutral oil just before the final stage. For a sticky finish, simmer 2 tablespoons of marinade reserved *before* it touched the chicken for 1 minute and brush it on during the last 3 minutes of the crisp.
