Winter Melon Pork Rib Soup
Method

- 3 Drop the heat to the gentlest simmer you can manage: small scattered bubbles, a trembling surface, no rolling boil. Skim as needed for the first 15–20 minutes. - 8 Season with salt and white pepper. Taste the broth, add salt gradually between tastes, and finish with a tiny pinch of white pepper only if it wants a lift. Turn off the heat and rest the soup, covered loosely — the rest lets the broth settle and round out. ⏱ 10mUses: fine salt, white pepper

A Jiangnan-leaning house version. The soup itself is easy, but the timing is sequenced — once the broth base is going you do not want to be cutting winter melon, untangling tofu skin, or guessing what goes in next. This rewards calm sequencing, not improvisation.
The kelp goes in late on purpose: leave it for an hour and the soup drifts away from winter melon rib soup and starts tasting swampy and marine. 15–20 minutes is enough. If you want a cleaner broth, fish the kelp out before adding the winter melon.
**Tofu skin choice.** Thick 厚百叶 holds shape and tolerates 8–10 minutes in the pot. If you only have thinner 千张, knot it loosely and shorten the final stage to 5–6 minutes — it goes slack fast.
**Winter melon prep.** If the skin is tender, leave it on. If the rind is thick and hard, shave it down to a thin band for structure. Remove the spongy seed core if the melon is very mature.
**Doneness cues.** Winter melon is right when the edges turn translucent, the interior softens, and the pieces still hold shape — not collapsing into mush.
**If people are late.** Do not keep the soup at an active simmer once the winter melon is in. Turn the heat off, cover, and rewarm gently right before serving.
